Easy Asian Black Bean Chicken Stir Fry

A super fast and delicious mostly-Asian stir fry that's perfect for weeknight cooking. The chili oil gives it a real kick!

Ingredients

  • 1 Chicken Breast
  • 1/2 Cup Broccoli
  • 1 Tbsp Hot Black Bean Sauce OR 1/2 Tbsp each Hot Chili Oil and Fermented Black Beans
  • 2 Tbsp Soy Sauce or Liquid Aminos
  • 1 Tbsp Rice Vinegar
  • 1-2 Tbsp Sesame Oil
  • 1 Tbsp Water
  • Spinach Leaves

Instructions

  1. Chop chicken into bite sized pieces.
  2. Brown chicken in sesame oil.
  3. Add broccoli a few minutes after chicken.
  4. Add water and all sauces and stir to coat.
  5. When the chicken and broccoli are done (about 10 minutes) turn off the heat, add the spinach and cover to wilt.
  6. Serve with steamed white rice mixed with rice seasoning

Notes

I made this to serve one (me!), and had enough for dinner and lunch the next day. I'd say, add an extra chicken breast for each two people, maybe one per person if they're really hungry.

I know spinach isn't usually in Asian cooking, but I had some I needed to use up and it came out great! I'm sure you could use bok choy instead if you toss it in a couple of minutes before the chicken is done.
